It's been a while since I've posted a recipe, so here is one of my favorite quick meals. You can make it with or without chicken.
Ingredients
- 3/4 cup chopped asparagus
- 3/4 cup sliced mushrooms
- 1 cup white rice
- 2 cups chicken broth
- 1/4 tsp. dried basil
- 1/3 cup grated Parmesan cheese
- 1 chicken breast, cut into small pieces (optional)
Directions
- If making with chicken, brown the chicken pieces first.
- Add the chicken broth and bring to a boil. Pour in the rice and simmer for 10 minutes.
- Mix in the asparagus, mushrooms, and basil, and simmer for another 10 minutes.
- Stir in the Parmesan cheese.
Super easy and very delicious!
