One Sunday when we were first married, we didn't know what to make for dinner. We looked in our fridge and threw everything together in a delicious pasta salad. It has varied over the years depending on what we have on hand, but it always stays yummy!
- rotini or bowtie pasta (or whatever else you have)
- olive oil
- red onion, chopped
- olives, sliced
- tomatoes, chopped
- raw zucchini, chopped
- optional add-ins: steamed broccoli florets, sliced raw mushrooms, chopped summer sausage, chicken chunks, or bacon pieces
- salt & pepper
- Italian seasoning
- Parmesan cheese
- Cook pasta. Toss with olive oil.
- Mix in the veggies (and meat if applicable). Season to taste.
- Serve warm or cold.
