Ingredients
- 3 cups cooked rice (1 cup uncooked)
- 1/2 onion, diced
- 1 tsp. crushed or minced garlic
- 1/2 can corn
- 1 can black-eyed peas, drained
- 2 cups spinach leaves
- 1/2 tsp. thyme
- 1/8 tsp. cayenne
- salt to taste
- Saute the onion and garlic in olive oil until the onions are opaque.
- Mix in the rice, corn, and black-eyed peas, and heat through.
- Add the spinach and seasonings and cook until the spinach wilts, stirring often.
