Quick & Easy Southern Stir Fry

When you need a quick and easy dinner, this recipe is perfect! It's also a great way to use up that leftover rice or spinach.


Ingredients
  • 3 cups cooked rice (1 cup uncooked)
  • 1/2 onion, diced
  • 1 tsp. crushed or minced garlic
  • 1/2 can corn
  • 1 can black-eyed peas, drained
  • 2 cups spinach leaves
  • 1/2 tsp. thyme
  • 1/8 tsp. cayenne
  • salt to taste
Directions
  1. Saute the onion and garlic in olive oil until the onions are opaque.
  2. Mix in the rice, corn, and black-eyed peas, and heat through.
  3. Add the spinach and seasonings and cook until the spinach wilts, stirring often.
